This for me is one of my ultimate comfort food dishes, its quick, simple and filling.
This is easily enough for two people if serving with a nice crisp salad or if your greedy like me
this on its own makes a pretty substantial meal.
For this recipe you need the following.
3 to 4 medium potatoes (anything that boils and mashes well)
150g of cheezly or other vegan cheese you like. (plus a bit for the topping)
2 table spoons of vegan cream cheese.
Salt and pepper.
1 tablespoon of oil
2 tablespoons of margarine.
1 small white onion.
Nutritional yeast (optional)
To start off fill a kettle and get it boiling ready for the potatoes.
Next give the potatoes a quick rinse and scrub if dirty.
Now cut the potatoes in half and then in half again, aim for about one inch chunks.
When the kettle has boiled place the potatoes in a saucepan add the water and bring back to the boil.
Next dice your onion as fine as you can and fry with the oil and half a tablespoon of margarine on a low heat
you want the onions to caramelise slowly and not burn. This will make them sweet and lovely.
When the potatoes have come back to the boil turn them down to a simmer for about 20 minutes, keep and eye on them
as you don’t want them to turn to mush.
While waiting for the potatoes grab a small ovenproof dish about 6 inches across by about 2 inches deep, or any small
casserole type dish you have will be fine.
Now i like to add grease my dish with a tiny bit of margarine and season with a little touch of salt and pepper but you
don’t need to.
Check the onions and place to one side if done.
Check on the spuds and turn on the grill to medium heat. Then drain your potatoes and place the saucepan on a heat
Now grab a masher and mash the potatoes until there are no lumps.
Then use a fork to mix in the remaining margarine,
then add the cheezly, cream cheese, salt and pepper and finally the onions.
You want the whole thing to be evenly combined and you should season to your own taste.
Once you have mixed it all up, spoon it into the dish and even out the top with a fork,
then add some cheese to the top and some salt and pepper if you want.
Place under a grill on medium heat for about 5-10 minutes until golden brown.
Tuck in and enjoy.
This i a dish i love to make and its perfect for any time but just feels right in winter.
Its so warming and comforting, also its so easy to adapt.
I love to add some veggie bacon and mayo to make it even creamier.
There isn’t really anything you can do wrong, add whatever you like and make it your own.
